  • 2 5-ounce cans albacore tuna in water
  • 1 15.5-ounce can of white kidney beans, drained
  • 4 large hard-boiled eggs
  • 2 scallions, thinly sliced
  • 1 cup frozen peas
  • 1 cup whole milk cottage cheese
  • 1/2 cup mayonnaise
  • 24 tbsp apple cider vinegar
  • 2 tsp Dijon mustard
  • 1 tsp dried dill
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and cool under cold water.
  2. In a large bowl, combine cottage cheese, mayonnaise, apple cider vinegar, Dijon mustard, dried dill, garlic powder, onion powder, black pepper, and salt; mix until smooth.
  3. Add the cooled pasta, drained tuna, beans, peas, chopped eggs, and scallions to the dressing; gently fold to combine.
