  • 1 medium English cucumber, diced
  • 1 large bell pepper, diced
  • 12 medium carrots, shredded
  • ¼ medium red onion, thinly sliced
  • ½ cup fresh cilantro, chopped
  • ½ cup creamy peanut butter
  • ¼ cup soy sauce (or tamari)
  • 2 tablespoons rice vinegar
  • 2 tablespoons fresh lime juice
  • 23 tablespoons toasted sesame seeds

Instructions

  1. Cook edamame in boiling salted water for about 5 minutes (4-8 minutes for pods). Drain and cool in an ice bath.
  2. Dice cucumber, bell pepper, and shred carrots while the edamame cools.
  3. In a bowl, whisk together peanut butter, soy sauce (or tamari), rice vinegar, lime juice, ginger, garlic, and honey until smooth.
  4. In a large mixing bowl, combine all vegetables and cooled edamame; gently fold in peanut sauce until well mixed.
  5. Chill for at least 15 minutes before serving; garnish with toasted sesame seeds.
