  • ¼ cup white granulated sugar
  • 1 medium egg, room temperature
  • 1 teaspoon vanilla extract
  • 245 grams all-purpose flour
  • ¼ teaspoon kosher salt
  • ¼ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • 1/3 cup sugar mixed with 2 tablespoons cinnamon
  • 4 ounces chopped white chocolate or dairy-free alternative
  • 2 tablespoons eggnog
  • 1/4 teaspoon freshly grated nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together unsalted butter, light brown sugar, and white granulated sugar until fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. Combine flour, baking soda, cream of tartar, and salt; add to the wet mixture until just combined.
  5. Roll tablespoon-sized balls of dough in cinnamon sugar and place on a lined baking sheet. Gently press centers to create indents.
  6. Bake for about 7 minutes; if needed, reshape indents while warm.
  7. For filling, melt chopped white chocolate with eggnog in short intervals until smooth. Let cool slightly.
  8. Fill each cookie's thumbprint with ganache and sprinkle with nutmeg.
