  • 14 tablespoons unsalted butter
  • 1 tablespoon ground espresso
  • 1/2 cup + 2 tablespoons light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup chopped semi-sweet chocolate or mini chocolate chips

Instructions

  1. Brown the butter in a stainless steel pan over medium heat until it's amber-colored (about 10 minutes) and let cool.
  2. Combine cooled browned butter with ground espresso.
  3. In a separate bowl, whisk together both sugars until combined.
  4. Add the egg, egg yolk, and vanilla to the sugar mixture; whisk until blended.
  5. Fold in flour, baking soda, salt, and chocolate chips until just mixed.
  6. Chill dough on a parchment-lined tray for at least 3–4 hours or overnight.
  7. Preheat oven to 350°F (180°C) and bake chilled dough balls for about 10–12 minutes until edges are golden.
