  • 1/4 cup diced red onion
  • 1/2 cup diced cherry tomatoes
  • 1 jalapeno (sliced, optional)
  • 1 large avocado (sliced)
  • (15 ounce) can fire roasted corn (drained)

Instructions

  1. Marinate the shrimp by combining olive oil, lime juice, spices, and cilantro in a bowl. Add shrimp and coat well. Refrigerate for 15 minutes.
  2. Cook rice according to package instructions. Set aside.
  3. Heat a skillet over medium-high heat. Cook marinated shrimp for 2-3 minutes on each side until opaque.
  4. Assemble bowls with cooked rice as the base, topped with cooked shrimp and desired fresh veggies.
