  • 2 tablespoons fresh rosemary leaves
  • 2 cups finely chopped fresh black mission figs
  • 3 tablespoons powdered pectin
  • 2 tablespoons bottled lemon juice
  • 2 1/2 cups granulated sugar

Instructions

  1. In a saucepan, bring apple vinegar and rosemary to a gentle simmer. Remove from heat and let steep.
  2. Prepare jars by washing them thoroughly in hot soapy water.
  3. Boil water in a stockpot, then lower clean canning jars to keep warm.
  4. Strain the infused vinegar into another saucepan, discarding rosemary leaves.
  5. Stir chopped figs, powdered pectin, and lemon juice into the strained vinegar. Bring to a full boil.
  6. Add granulated sugar, stirring constantly until dissolved; return to a boil.
  7. Fill jars with hot jam, leaving 1/4-inch headspace, then process in boiling water for ten minutes.
  8. Let jars cool at room temperature for 12-24 hours before checking seals.
