  • 4 tablespoons unsalted butter
  • 6 cloves garlic, chopped
  • 3 anchovy fillets
  • 1/3 cup fruit juice (replace dry white grape juice)
  • 1 (28-ounce) can crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 cup black or Castelvetrano olives, halved
  • 2 tablespoons capers
  • 1 1/2 pounds white fish (cod, halibut, or tilapia), cut into pieces
  • Sea salt

Instructions

  1. Preheat your oven to 400°F.
  2. In a large ovenproof skillet, melt the butter over medium heat and sauté the garlic and anchovies until fragrant.
  3. Add the grape juice and reduce slightly before stirring in the crushed tomatoes, oregano, thyme, olives, and capers. Simmer for about 10 minutes.
  4. Season the fish with sea salt and place it in the skillet with the sauce.
  5. Bake for 8-10 minutes until the fish is opaque and flakes easily.
  6. Serve hot with fresh herbs and red pepper flakes if desired.
