  • 1 medium onion, chopped
  • 3 garlic cloves, finely chopped
  • 1 red bell pepper, chopped
  • 2 cups cooked chicken, shredded
  • 1 can (4 oz) diced green chiles
  • Sea salt and black pepper
  • 15 ounces red enchilada sauce (Siete Foods)
  • 810 cassava flour tortillas (Siete Foods)
  • 1 1/2 cups non-dairy cheddar cheese shreds

Instructions

  1. Heat avocado or olive oil in a skillet over medium heat. Sauté onion until translucent, then add garlic and red bell pepper until tender.
  2. Stir in shredded chicken, diced green chiles, salt, and pepper. Mix for about 5 minutes.
  3. Preheat oven to 375°F (190°C). Spread enchilada sauce in a baking dish. Fill each tortilla with the mixture and roll tightly.
  4. Place rolled tortillas seam-side down in the dish. Pour remaining sauce on top and sprinkle with non-dairy cheese.
  5. Bake for about 25 minutes or until golden brown and bubbly.
