  • 1/2 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 1 cup packed light brown sugar
  • 2 egg yolks, room temperature
  • 2 tsp vanilla extract
  • 1 cup heavy cream (for topping)
  • 8 oz mascarpone cheese
  • 1 tbsp instant espresso powder
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 1/4 tsp pumpkin pie spice
  • 1/4 cup heavy cream (for drizzling)
  • 2 tsp instant espresso powder
  • 4.5 oz white chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream unsalted butter, granulated sugar, and light brown sugar until fluffy.
  3. Mix in egg yolks, canned pumpkin, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice. Gradually add dry ingredients to wet mixture.
  5. Scoop dough onto the prepared baking sheet about two inches apart. Bake for 12 minutes or until lightly golden around the edges.
  6. While cooling, whip heavy cream, mascarpone cheese, espresso powder, vanilla extract, powdered sugar, and pumpkin pie spice until creamy.
  7. Spread or pipe cream topping on cooled cookies.
