  • 1 1/4 cups buttermilk, room temperature
  • 2/3 cup vegetable or canola oil
  • 2 squirts of green gel food coloring
  • 2 tsp vanilla extract or vanilla bean paste
  • 1 tsp white vinegar
  • 1 1/2 cups unsalted butter, room temperature (for frosting)
  • 1/2 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract or vanilla bean paste (for frosting)
  • 1 tsp fine salt (for frosting)
  • 8 cups powdered sugar
  • 2 Tbsp heavy whipping cream, room temperature

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two cake pans with parchment paper.
  2. In a bowl, whisk together cake flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, beat the unsalted butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then mix in buttermilk, oil, and green food coloring.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. Divide the batter between the prepared pans and bake for about 28 minutes or until a toothpick comes out clean.
  7. Cool cakes completely before frosting.
  8. For the cream cheese buttercream, beat butter and cream cheese until smooth; gradually add powdered sugar followed by vanilla extract.
  9. Assemble the cake by layering with frosting in between and around the sides; decorate as desired.
