  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese (or your favorite cheese)
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ cup beef broth (or vegetable broth)

Instructions

  1. Sauté sliced onions in butter and olive oil over medium heat for 20-25 minutes until caramelized.
  2. Grease a baking dish and layer half of the potato slices on the bottom.
  3. Spread caramelized onions over the potatoes, then add another layer of remaining potato slices.
  4. In a bowl, whisk together cream, garlic powder, thyme, salt, and pepper; pour over layered potatoes and onions.
