  • Pâte Sucrée dough (for tartlet shells)
  • 2 cups fresh strawberries, chopped (for jam and garnishing)
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved for garnish

Instructions

  1. Prepare the Pâte Sucrée dough and divide it into 12 portions. Press into tartlet pans and freeze.
  2. Preheat oven to 375°F (190°C). Prick frozen shells with a fork, line with parchment paper, fill with weights, and bake for 10-15 minutes until golden.
  3. For the strawberry jam, cook chopped strawberries with sugar over medium heat until thickened; let cool.
  4. For the pastry cream, simmer sweetened condensed milk, whole milk, and heavy cream. Whisk egg yolks with cornstarch; temper by adding hot liquid gradually before mixing back into the saucepan. Stir until thickened.
  5. Chill the pastry cream for about two hours.
  6. Assemble by spreading strawberry jam on cooled shells, piping over pastry cream, and topping with halved strawberries.
