  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla extract
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) for fan-assisted or 170ºC (338ºF) for conventional ovens, and line your baking tray with parchment paper.
  2. Melt the chopped dark chocolate and butter over simmering water until smooth; add in the vanilla extract.
  3. In another bowl, whisk together the caster sugar, demerara sugar, and eggs until light and fluffy.
  4. Sift together the flour, cocoa powder, baking powder, and salt; fold in the chocolate chips.
  5. Gently mix the melted chocolate into the egg mixture, then incorporate the dry ingredients until just combined.
  6. Drop spoonfuls of batter onto the prepared tray and bake for 12-14 minutes until set with crackly tops.
  7. Cool on the tray for about 10 minutes before transferring to a wire rack.
