Garlic Broccoli Stir Fry is a delightful, quick meal that brings together vibrant broccoli and wholesome chickpeas in a flavorful garlic and ginger sauce. Perfect for busy weeknights, this dish is not only easy to prepare but also packs a nutritious punch.

  • 1 tablespoon oil
  • 1 onion (diced)
  • 5 garlic cloves (minced)
  • 1 heaped tablespoon fresh ginger (minced)
  • 1 medium head of broccoli (cut into small florets)
  • 1 (15 oz) can of chickpeas (rinsed and drained)
  • 1/3 cup vegetable broth
  • 1/2 cup of water
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon cornstarch
  • Black pepper & sea salt (to taste)
  • Pinch of cayenne pepper

Instructions

  1. Heat oil in a pan over medium heat. Sauté diced onion, minced ginger, and garlic for about 3-4 minutes until fragrant.
  2. Add broccoli florets and vegetable broth; cook for about 10 minutes until tender but still crunchy.
  3. In a bowl, mix water, soy sauce, vinegar, maple syrup, and cornstarch until smooth. Pour into the pan with broccoli and add chickpeas.
  4. Simmer until the sauce thickens slightly. Taste and adjust seasonings if needed.
  5. Serve warm over cooked rice or enjoy as is.
