  • 1.2 kg Sweet Potatoes
  • 6 tbsp Unsalted Butter (melted)
  • 3 large cloves Garlic (finely grated)
  • 1 tbsp Fresh Rosemary (finely diced)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Nutritional Yeast (optional)

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel sweet potatoes, trim ends, and slice into rounds about 3mm thick for even cooking.
  3. In a bowl, mix melted butter with garlic, rosemary, salt, and pepper. Coat the potato slices in this mixture.
  4. Layer the potato slices in muffin cups or a baking dish, brushing remaining butter on top.
  5. Bake covered for 35 minutes; then uncover and bake at 200C/400F for an additional 15 minutes until golden brown.
  6. Gently scoop out the stacks and drizzle any leftover buttery sauce over them before serving.
