  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh chives (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly, then dry and prick them with a fork.
  2. Place the potatoes directly on the oven rack and bake for about 45 minutes until tender.
  3. Let the baked potatoes cool slightly, cut them in half lengthwise, and scoop out most of the flesh, leaving about 1/4 inch around the edges.
  4. In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Brush this mixture over the insides and outsides of each potato skin.
  5. Arrange the seasoned skins cut-side up on a baking sheet and roast for an additional 15-20 minutes until golden brown and crispy.
  6. After removing from the oven, sprinkle with fresh parsley and chives before serving.
