  • 4 pounds beef short ribs
  • 1 cup miso paste (white or yellow)
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1/4 cup sesame oil
  • 2 cups beef broth
  • Green onions and sesame seeds for garnish

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a Dutch oven over medium-high heat, add sesame oil until shimmering. Season short ribs with salt and pepper, then sear on all sides until golden brown (about 4–5 minutes per side). Remove and set aside.
  3. In a bowl, mix miso paste, soy sauce, rice vinegar, brown sugar, ginger, and garlic until smooth.
  4. Deglaze the pot with a splash of beef broth to scrape up browned bits.
  5. Return short ribs to the pot, pour the sauce over them along with remaining broth. Bring to a simmer.
