  • 110 grams super fine white sugar (about 1 cup + 2 teaspoons)
  • 12 teaspoons brown gel food coloring (optional)
  • 57 grams (2 ounces) white chocolate, melted
  • 1/2 cup (114 grams) unsalted butter, softened
  • 1 3/4 cup (210 grams) confectioners' sugar
  • 1 tablespoon (20 grams) fancy molasses
  • 1 teaspoon vanilla

Instructions

  1. Combine almond flour, confectioners' sugar, and spices in a bowl; sift to remove lumps.
  2. In another bowl, whip egg whites until frothy; gradually add white sugar until stiff peaks form.
  3. Fold dry ingredients into egg whites gently to form a smooth batter.
  4. Pipe small circles on parchment-lined baking sheets; let rest for 30 minutes.
  5. Bake in a preheated oven at 300°F (150°C) for 15-20 minutes until shells lift easily.
  6. For the filling, beat softened butter and confectioners' sugar; add melted chocolate, molasses, and vanilla until fluffy.
