  • 300g gingerbread cookies (crushed)
  • 120g cream cheese (softened)
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 1 tsp vanilla extract
  • 250g white chocolate chips (for coating)
  • Optional toppings: festive sprinkles, crushed gingerbread, or cinnamon

Instructions

  1. Crush the gingerbread cookies into fine crumbs using a food processor or a rolling pin.
  2. In a bowl, mix the crushed cookies with cream cheese, spices, and vanilla until you achieve a soft dough.
  3. Roll the mixture into tablespoon-sized balls and place them on a parchment-lined baking sheet.
  4. Chill the truffles in the refrigerator for 30 minutes or in the freezer for 15 minutes.
  5. Melt white chocolate in a microwave-safe bowl and dip each chilled truffle into it. Let excess chocolate drip off before placing them back on the tray.
  6. Allow the truffles to set completely at room temperature or refrigerate to speed up the process.
