  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 1 cup frozen peas
  • 1 1/2 cups gluten-free all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup unsalted butter, melted
  • 1 large egg

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté for about 5-7 minutes until softened.
  2. Stir in garlic, thyme, rosemary, salt, and pepper; cook for another minute.
  3. Pour in chicken broth and bring to a boil. Add chicken breasts; reduce heat to simmer and cover for about 20 minutes.
  4. While chicken simmers, prepare dumpling dough by mixing gluten-free flour, baking powder, salt, and pepper in one bowl; combine milk, melted butter, and egg in another. Mix wet ingredients into dry until just combined.
  5. Shred cooked chicken with forks and return to pot with frozen peas. Drop dumpling dough onto simmering broth; cover pot tightly and cook for an additional 15 minutes without lifting the lid.
