  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter, melted (for the cinnamon sugar swirl)
  • 1 tbsp oat flour (for the cinnamon sugar swirl)
  • 2 tbsp white sugar (for the cinnamon sugar swirl)
  • 1/2 tbsp cinnamon (for the cinnamon sugar swirl)
  • 1/4 cup salted butter, slightly softened (for the crumble topping)
  • 1/4 cup light brown sugar (for the crumble topping)
  • 1/4 cup almond flour (for the crumble topping)
  • 1/2 cup oat flour (for the crumble topping)
  • 2 tsp cinnamon (for the crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix softened butter, applesauce, eggs, sugar, and vanilla until smooth. Stir in almond flour, oat flour, baking powder, and salt until well combined.
  3. In another bowl, combine melted butter with oat flour, sugar, and cinnamon for the swirl mixture.
  4. Prepare the crumble topping by mixing brown sugar, almond flour, oat flour, and cinnamon with room temperature butter until crumbly.
  5. Layer half of the batter in a greased or lined baking dish. Add half of the cinnamon mixture and swirl gently. Top with remaining batter and repeat the swirl.
  6. Bake for about 25 minutes; add crumble topping and bake for an additional 18 minutes or until a toothpick comes out clean.
  7. Allow cooling before cutting into squares.
