  • ½ tsp sea salt
  • 1 butternut squash, peeled, seeded, and cubed
  • 3 garlic cloves, chopped
  • 1 tbsp fresh sage, chopped
  • ½ tbsp rosemary, minced
  • 1 tsp fresh ginger, grated
  • 34 cups vegetable broth
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion with sea salt and black pepper for 5–8 minutes until soft.
  2. Add cubed butternut squash and cook for another 8–10 minutes until slightly browned.
  3. Stir in garlic, sage, rosemary, and ginger; cook for an additional 30–60 seconds until fragrant.
  4. Pour in vegetable broth and bring to a gentle boil. Reduce heat to low and simmer covered for about 25 minutes until squash is tender.
  5. Blend the soup until smooth using an immersion blender or regular blender. Adjust consistency with more broth if desired.
  6. Taste and season as needed before serving hot with parsley and toasted pepitas on top.
