  • 1 cup walnuts
  • 3 tablespoons brown sugar
  • 4 tablespoons butter, melted
  • 1 cup sugar
  • 4 tablespoons cornstarch
  • Pinch of salt
  • 4 egg yolks
  • 1 1/2 cups fresh pink grapefruit juice
  • 1/4 cup fresh lemon juice
  • Tiny drop of pink gel food coloring
  • 5 tablespoons butter, cut into pieces

Instructions

  1. Preheat your oven to 350°F.
  2. In a food processor, blend gingersnaps into fine crumbs. Add walnuts and brown sugar; pulse until finely ground. Mix in melted butter and press into a 9-inch pie plate. Bake for 10-12 minutes until golden brown. Allow to cool.
  3. In a saucepan, whisk together sugar, cornstarch, salt, and egg yolks. Gradually add grapefruit juice and lemon juice along with food coloring.
  4. Cook over medium heat while whisking until boiling; time for one minute to thicken.
  5. Remove from heat and stir in butter pieces until melted and smooth.
  6. Pour filling into cooled crust and chill uncovered in the fridge for at least four hours before serving.
