  • 1 large lemon
  • 6 cups (1.5 L) water
  • 8 cups (1.8 kg) sugar

Instructions

  1. Prepare the fruit by washing and peeling the grapefruits and lemon. Remove any seeds and slice into thin segments.
  2. In a large pot, combine the sliced fruit with water. Bring to a gentle boil, reduce heat, and simmer for 30 minutes until softened.
  3. Gradually stir in sugar until fully dissolved.
  4. Return to a rolling boil and cook for 10-15 minutes until setting point is reached (use the cold plate test).
  5. Allow to cool for 10 minutes before pouring into sterilized jars and sealing tightly.
