  • ⅓ cup red onion (finely diced)
  • 1 cup sweet cherry tomatoes (halved)
  • 23 cups fresh arugula
  • 1 medium red bell pepper (chopped)
  • 1 medium yellow bell pepper (chopped)
  • 1 medium green bell pepper (chopped)
  • 1 ½ cups English cucumber (sliced)
  • ½ cup kalamata olives (sliced)
  • 4 oz feta cheese (cubed)
  • 2 tbsp extra-virgin olive oil
  • 1 large lemon (juiced (~34 Tablespoons))
  • 2 tbsp apple cider vinegar
  • 1 tsp dijon mustard
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • ½ tsp salt (more to taste)
  • ¼ tsp black pepper (more to taste)

Instructions

  1. Cook the chickpea pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a bowl, whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper.
  3. In a large bowl, combine cooled pasta with red onion, cherry tomatoes, arugula, bell peppers, cucumber, olives, and feta.
  4. Pour the dressing over the salad and toss gently to coat.
  5. Chill in the refrigerator for at least 30 minutes before serving for maximum flavor.
