  • 1 pound ground beef
  • 3 garlic cloves, minced
  • 2 medium onions, minced
  • 2 tbsp breadcrumbs
  • 1 tsp baking soda
  • 1 cup fresh herbs (parsley, mint, coriander), chopped
  • 6 medium potatoes, cut into wedges
  • 1 cup thick Greek yogurt
  • Grated cucumber, lemon juice, fresh dill (for yogurt sauce)
  • Lettuce leaves, diced tomatoes, cucumbers, red onion, Kalamata olives (for serving)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine ground beef, minced garlic, onions, breadcrumbs, baking soda, herbs, salt and pepper. Mix gently until just combined.
  3. Form mixture into meatballs (about 1 inch in diameter) and place on a lined baking sheet.
  4. Toss potato wedges in olive oil and seasonings before placing on another lined tray.
  5. Bake meatballs for 20-25 minutes and potatoes for about 30-35 minutes until both are golden brown.
  6. For the yogurt sauce, mix Greek yogurt with grated cucumber, minced garlic, lemon juice, dill or mint; season to taste.
  7. Serve meatballs over crisp lettuce with roasted potatoes and top with yogurt sauce and additional veggies.
