  • 1 pound ground lamb or beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • 1 egg
  • 1 cup cooked quinoa or rice
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • Lemon wedges for serving
  • For tzatziki: 1 cup Greek yogurt, 1/2 cucumber grated, 1 tablespoon fresh dill, 1 clove garlic minced, 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground lamb or beef, breadcrumbs, onion, garlic, oregano, cumin, salt & pepper, egg, and olive oil. Mix until just combined.
  3. Shape the mixture into meatballs (about 1 inch in diameter) and place them on the prepared baking sheet.
  4. Bake for about 20 minutes until browned and cooked through.
  5. Meanwhile, prepare the tzatziki sauce by mixing Greek yogurt with grated cucumber (squeezed dry), dill, minced garlic, lemon juice, salt & pepper.
  6. To assemble your bowl: start with quinoa or rice as your base; add meatballs and top with chopped veggies and crumbled feta. Finish with a generous drizzle of tzatziki.
