  • 1/4 cup cilantro (chopped)
  • 1 jalapeño (seeded and minced (optional))
  • 1 lime (juiced)
  • Salt to taste
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt (optional, for lighter version)
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1 avocado (sliced or mashed)
  • Sesame seeds (for garnish)
  • Green onions (chopped, for garnish)

Instructions

  1. Marinate shrimp in olive oil, paprika, garlic powder, salt, black pepper, and cayenne for 15 minutes.
  2. Mix thawed corn, diced red onion, cilantro, lime juice, and salt in another bowl to create the corn salsa.
  3. Grill shrimp on medium heat for about 2-3 minutes per side until pink and opaque.
  4. Whisk together mayonnaise, Greek yogurt (if using), lemon juice, minced garlic, salt, and pepper to make the creamy sauce.
  5. Assemble by layering corn salsa in bowls topped with grilled shrimp and avocado slices. Drizzle with creamy sauce.
