  • 1 lb ground turkey
  • 2 medium sweet potatoes
  • 2 small zucchini
  • 2/3 cup shredded parmesan cheese
  • 5 tbsp olive oil
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • Salt & pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and chop sweet potatoes; toss with 2 tbsp olive oil, garlic powder, rosemary, salt, and pepper in a baking dish.
  3. Bake sweet potatoes for 30 minutes.
  4. Meanwhile, brown ground turkey in a skillet with remaining olive oil and seasonings.
  5. Chop zucchini and add it to the cooked turkey.
  6. Combine baked sweet potatoes with turkey mixture.
  7. Bake for an additional 10 minutes; top with parmesan cheese and bake another 10 minutes until golden.
