  • 6 1/4 cups bread flour
  • 2 teaspoons instant dry yeast
  • 2 cups warm water (105°F – 115°F)
  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 4 teaspoons fine sea salt
  • 7 ounces gruyère cheese (cubed)
  • 2 tablespoons fresh thyme leaves
  • Maldon sea salt flakes for topping

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast; let sit for about 5 minutes until foamy.
  2. Stir in bread flour and fine sea salt until combined into a shaggy dough.
  3. Knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover with a damp cloth, and let rise in a warm spot until doubled (1-2 hours).
  5. Punch down the dough and shape it on an oiled baking sheet into an even rectangle.
  6. Drizzle olive oil over the top; scatter gruyère cubes and thyme; sprinkle Maldon sea salt flakes.
  7. Cover and let rise again for about an hour until puffy.
  8. Preheat oven to 425°F (220°C) and bake for 25-30 minutes until golden brown.
  9. Allow to cool slightly before cutting into squares.
