  • 4 slices turkey bacon (diced)
  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • Salt and freshly ground pepper (to taste)
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 ½ cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 2 sprigs thyme
  • 1 pound carrots (peeled and cut into 1-inch chunks)
  • 1 ½ pounds Yukon Gold potatoes (peeled and cut into 1-inch pieces)
  • ½ cup chopped parsley

Instructions

  1. In a large Dutch oven, heat the vegetable oil over medium-high heat. Add diced turkey bacon and cook until crispy. Remove and set aside.
  2. Season the beef chunks with salt and pepper. In batches, brown the beef in the same pot until seared on all sides. Remove and set aside.
  3. Sauté onions in the pot for about five minutes until golden brown, then add minced garlic and cook until fragrant.
  4. Stir in flour and tomato paste, cooking for one to two minutes until darkened.
  5. Pour in beef broth, adding Worcestershire sauce and brown sugar; stir to combine.
  6. Return browned beef and turkey bacon to the pot along with thyme sprigs. Bring to a boil, then reduce heat to low and simmer for one hour.
  7. Incorporate carrots and potatoes into the stew, cover, and continue simmering for another hour until everything is tender.
  8. Discard thyme sprigs, adjust seasoning if necessary, then stir in fresh parsley before serving.
