  • 1 pound ground lamb or beef
  • ¼ cup minced onion
  • 3 cloves garlic (minced)
  • 1 large egg
  • ½ cup finely crumbled feta cheese
  • 1 teaspoon Greek seasoning
  • ½ teaspoon salt
  • 12 cloves garlic (minced or pressed)
  • ¼ teaspoon salt (to taste)
  • ½ of one European cucumber (peeled, grated, drained)
  • 1 cup plain yogurt (drained)
  • 1 tablespoon chopped fresh mint (plus more to taste)
  • 1 tablespoon chopped fresh dill
  • Freshly ground black pepper (to taste)
  • 1 tablespoon olive oil
  • 2 cups cooked rice (white or brown)
  • Juice of one half lemon
  • ¼ teaspoon salt (to taste)
  • 1 cup tomatoes (diced, halved, or chopped)
  • 1 cup diced cucumber (drained)
  • 1 tablespoon olive oil
  • ½ teaspoon salt (to taste)

Instructions

  1. Preheat oven to 400°F. In a bowl, mix ground lamb or beef with onion, garlic, egg, feta cheese, Greek seasoning, and salt until just combined. Form into 1-inch meatballs and place on a parchment-lined baking sheet.
  2. Bake for 20 minutes until cooked through and lightly browned.
  3. While baking, prepare tzatziki by mixing minced garlic with grated cucumber, yogurt, mint, dill, and black pepper in a bowl.
  4. For lemon rice, heat olive oil in a pan over medium heat and stir in cooked rice along with lemon juice and salt.
  5. Assemble bowls: layer lemon rice at the bottom, top with meatballs, add cucumber salad made from diced tomatoes and cucumbers dressed lightly in olive oil and salt, then finish with tzatziki.
