  • 2/3 cup maple syrup or honey
  • 1/4 cup plain or vanilla Greek yogurt
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it or lining with paper liners.
  2. In a large mixing bowl, combine pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence. Whisk until smooth.
  3. In another bowl, mix whole wheat flour, cinnamon, nutmeg, salt, baking soda, and baking powder together.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
  5. Fill each muffin cavity about three-quarters full with batter.
  6. Bake for about 18 minutes or until a toothpick inserted comes out clean.
  7. Allow muffins to cool in the pan for five minutes before transferring them to wire racks.
