  • 2 tbsp fresh basil
  • 2 tbsp fresh parsley
  • 1 tsp dry thyme
  • 3 cloves garlic
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 red onion
  • 1 red bell pepper
  • 5 cloves garlic

  • ¼ tsp dry oregano
  • ¼ tsp dry thyme
  • 700 grams crushed tomatoes
  • 2 tbsp fresh basil
  • 2 small eggplants
  • 2 zucchini
  • 6 tomatoes
  • 2 red onions
  • 1 yellow bell pepper

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Slice the vegetables evenly and set aside.
  3. In a large oven-proof pan, heat olive oil and sauté diced red onion and bell peppers until soft. Add garlic, followed by salt, pepper, oregano, thyme, and crushed tomatoes; simmer for 10 minutes.
  4. Layer sliced vegetables on top of the sauce in a decorative pattern.
  5. Drizzle with additional olive oil and sprinkle with salt and pepper before covering with foil.
  6. Bake for 40 minutes covered, then uncover and bake for another 20 minutes until softened.
