Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1 tablespoon molasses
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • 3/4 cup unsalted butter (softened)
  • 2 ounces cream cheese (dairy-free alternative optional)
  • 34 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cream (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Mix in molasses, vanilla extract, and eggs one at a time until well combined.
  3. In another bowl, whisk together flour, cinnamon, baking soda, and salt. Gradually blend into the wet mixture. Fold in quick oats.
  4. Scoop two tablespoons of dough onto lined baking sheets. Bake for 10 minutes or until lightly golden around the edges.
  5. Cool cookies on wire racks while preparing the filling by beating softened butter and cream cheese until smooth. Gradually add powdered sugar to achieve desired sweetness; stir in vanilla extract and salt.
  6. Once cookies are cool, spread filling on one cookie and top with another.
