  • 1/2 cup Dutch-process cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1 cup granulated sugar
  • 10 tablespoons unsalted butter, at room temperature
  • 1 large egg, at room temperature
  • For the Filling:
  • 1 stick unsalted butter, at room temperature
  • 2 1/2 teaspoons pure vanilla extract
  • 2 1/2 cups powdered sugar, sifted
  • 1/8 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix flour, cocoa powder, baking soda, baking powder, and salt.
  2. In another bowl, cream together sugar and butter until light and fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Scoop tablespoon-sized portions onto a baking sheet lined with parchment paper and bake for about 10 minutes.
  6. For the filling, beat softened butter, powdered sugar, vanilla extract, and salt until smooth.
  7. Once cookies are cool, spread or pipe filling between two cookies.
