  • 1 chipotle pepper in adobo sauce + 1 tablespoon adobo sauce
  • Juice of 1 lime
  • 1 tablespoon honey
  • 2 cups cooked rice
  • 1 avocado, diced
  • 1 cup grilled corn (or defrosted frozen corn)
  • Fresh cilantro, jalapeño, and spices

Instructions

  1. Marinate the chicken: Combine olive oil, chopped chipotle pepper, adobo sauce, lime juice, honey, garlic powder, ground cumin, cilantro, salt, and pepper in a bowl. Add chicken and marinate for at least 30 minutes.
  2. Prepare avocado corn salsa: Mix grilled corn, diced avocado, jalapeño, cilantro, lime juice, ground cumin, salt, and pepper in another bowl.
