  • 1 fully cooked bone-in spiral chicken (8 lbs)
  • 1 orange, sliced
  • 1 cup orange juice
  • 1 cup dark brown sugar
  • 1 cup honey
  • 1/2 cup orange marmalade
  • 1/4 cup dijon mustard
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp Bayou City Lemon Pepper
  • 1/2 tsp cloves
  • 1 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a shallow roasting pan, layer the orange slices and pour fresh orange juice over them.
  3. Place the roasting rack in the pan and set the fully cooked chicken on top.
  4. In a saucepan, combine dark brown sugar, honey, orange marmalade, and salt; stir until blended and bring to a bubble to thicken.
  5. Simmer for 4 minutes to meld flavors.
  6. Coat half of the glaze over the chicken and bake uncovered for about 50 minutes.
  7. After 50 minutes, pour on remaining glaze and bake for an additional 20 minutes or until heated through (internal temp should reach 140°F /60°C).
  8. Let rest for 15-20 minutes before carving.
