  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 5 tablespoons lime juice
  • 1 head butter lettuce (or 5 cups of any lettuce)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (peeled and sliced)
  • 1/2 cup corn
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon garlic powder
  • Kosher salt and fresh ground black pepper to taste
  • Cilantro for garnish

Instructions

  1. Prepare the marinade by mixing olive oil, honey, lime juice, chili powder, cumin, garlic powder, salt, and pepper in a bowl.
  2. Marinate the shrimp for 15-30 minutes in the mixture.
  3. While marinating, arrange the lettuce in a serving bowl and top with corn, tomatoes, avocado, and any desired cheese.
  4. Cook the marinated shrimp in a skillet over medium-high heat until cooked through (about 4 minutes).
