- 1 pound raw medium-sized shrimp (peeled and deveined)
- 3 tablespoons olive oil
- 3 tablespoons honey
- 5 tablespoons lime juice
- 1 head butter lettuce (or 5 cups of any lettuce)
- 1 cup cherry tomatoes (halved)
- 1 avocado (peeled and sliced)
- 1/2 cup corn
- 2 teaspoons chili powder
- 1 1/2 teaspoons ground cumin
- 1/4 teaspoon garlic powder
- Kosher salt and fresh ground black pepper to taste
- Cilantro for garnish
- Prepare the marinade by mixing olive oil, honey, lime juice, chili powder, cumin, garlic powder, salt, and pepper in a bowl.
- Marinate the shrimp for 15-30 minutes in the mixture.
- While marinating, arrange the lettuce in a serving bowl and top with corn, tomatoes, avocado, and any desired cheese.
- Cook the marinated shrimp in a skillet over medium-high heat until cooked through (about 4 minutes).
- Transfer the shrimp to the salad and garnish with cilantro.
