  • 1 pound pasta (penne, elbow, fusilli, or rotini)
  • 1 medium green bell pepper (diced)
  • 1 medium red bell pepper (diced)
  • 1 small red onion (diced)
  • ½ cup black olives (sliced)
  • 8 ounces turkey slices (cut into small pieces)
  • 1 cup mozzarella cheese (cut into cubes)
  • 1 cup cherry tomatoes (halved)
  • ½ cup Parmesan cheese (shredded)
  • 1 cup Italian dressing
  • Salt & pepper (to taste)

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and cool slightly.
  2. In a large mixing bowl, combine cooked pasta with diced green and red bell peppers, red onion, black olives, turkey slices, mozzarella cheese, cherry tomatoes, and Parmesan cheese.
  3. Drizzle with Italian dressing and season with salt and pepper; toss well to combine.
  4. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
