  • 2 carrots, chopped
  • 2 celery sticks, chopped
  • 6 cups chicken or vegetable broth
  • 1 cup pastina pasta (or small pasta like acini di pepe)
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Chop the onion, carrots, and celery into manageable pieces.
  2. In a large pot, combine the chopped vegetables with the broth. Bring to a boil over high heat.
  3. Once boiling, reduce heat to low, cover, and simmer for 15-18 minutes until vegetables are tender.
  4. Remove cooked vegetables using a strainer and blend with ½-1 cup of broth until smooth.
  5. Return the pureed mixture to the pot, add pastina, and simmer for another 7-9 minutes until pasta is cooked.
  6. Stir in grated Parmesan cheese, seasoning with salt and pepper to taste.
  7. Serve warm in bowls garnished with fresh parsley if desired.
