  • 2 tablespoons Jamaican curry powder
  • 1 tablespoon adobo seasoning
  • 1 teaspoon allspice
  • 1 teaspoon dried thyme
  • 1 teaspoon turmeric
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion (chopped)
  • 1 large bell pepper (chopped)
  • 4 cloves garlic (chopped)
  • 2 tablespoons chopped ginger
  • 1 cup coconut milk (or chicken broth)
  • 1 pound yellow potatoes (diced)
  • 1 large carrot (peeled and chopped)

Instructions

  1. Season the chicken by washing it with vinegar, cutting it into bite-sized pieces, and marinating it with Jamaican curry powder, adobo seasoning, allspice, thyme, salt, and black pepper. Let it rest.
  2. Heat olive oil in a large pot over medium-high heat. Sauté onions and bell peppers until softened.
  3. Add garlic and ginger; cook until fragrant.
  4. Introduce the marinated chicken to the pot and brown on all sides.
  5. Pour in coconut milk or broth, then add diced potatoes and carrots. Stir well.
  6. Bring to a boil, then reduce heat to low and cover; let simmer for 20-30 minutes until chicken is tender.
