- 1 1/2 lbs ground beef
- 1 1/2 cups beef broth
- 1 cup heavy whipping cream
- 2 10-oz cans diced tomatoes with green chilis
- 1 medium red pepper (diced)
- 1 1/2 servings Keto Taco Seasoning
- Salt, pepper, and/or additional seasonings to taste
- Shredded cheese
- Sour cream
- Beef rinds
- In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add the beef broth, heavy whipping cream, diced tomatoes, diced red pepper, and taco seasoning to the pot. Stir well.
- Bring the mixture to just below a boil and then let it simmer for about 10 minutes.
- Taste and adjust seasonings as needed before serving.
