  • 8 tbsp unsalted butter (softened)
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 2 1/4 tsp pure vanilla extract
  • 1 1/4 cups whole milk
  • 1/2 cup extra-strong lavender Earl Grey tea (cooled)
  • For frosting: 16 tbsp unsalted butter, 4 cups confectioner's sugar, 1 tsp milk, 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line two cupcake pans with paper liners.
  2. In a large bowl, sift together flour, baking powder, and salt.
  3. In a stand mixer, cream softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then mix in vanilla extract.
  5. Gradually alternate adding dry ingredients and milk into the batter. Mix until just combined.
  6. Pour in cooled tea and fold gently until incorporated.
  7. Divide batter evenly among liners and bake for about 18 minutes or until a toothpick comes out clean.
  8. Cool cupcakes completely on wire racks before frosting.
