  • 1 tsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1½ cups granulated sugar
  • Zest of 3 small lemons (or 2 large lemons)
  • 1 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter and sugar until well combined. Stir in lemon zest, egg, egg yolk, and vanilla until smooth.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined. Gently fold in blueberries.
  5. Using a cookie scoop, drop dough onto the prepared sheet, leaving space between each ball. If desired, roll the dough balls in sugar before baking.
  6. Bake for 10-12 minutes or until edges are lightly golden but centers remain soft.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack.
