  • 2 1/3 cups all-purpose flour or whole wheat pastry flour
  • 2 1/3 cups old-fashioned oats
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup cold cubed butter
  • 8 ounces cream cheese (room temperature)
  • 3 egg yolks
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 28 ounces sweetened condensed milk
  • 1 cup fresh squeezed lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9″x13″ baking pan and line it with parchment paper.
  2. In a large bowl, mix together flour, oats, salt, baking powder, brown sugar, and granulated sugar.
  3. Add the cold cubed butter and blend until the mixture resembles coarse crumbs.
  4. Press half of the crumb mixture into the prepared pan to form the crust.
  5. In another bowl, beat the cream cheese until fluffy; add egg yolks one at a time, mixing well after each addition.
  6. Stir in lemon zest, vanilla extract, sweetened condensed milk, and lemon juice until smooth.
  7. Pour the filling over the crust and sprinkle remaining crumbs on top.
  8. Bake for about 30 minutes or until golden around the edges. Allow to cool before refrigerating for at least four hours before slicing.
