  • 14.4 ounces graham crackers (1 box)
  • 1/2 cup unsalted butter (melted)
  • 6.8 ounces instant lemon pudding mix (two 3.4-ounce boxes)
  • 3 cups whole milk
  • 32 ounces Cool Whip (four 8-ounce containers)
  • 16 ounces cream cheese (softened)
  • 2 cups powdered sugar
  • 2 tablespoons lemon zest
  • Lemon slices & mint leaves for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Crush graham crackers in a food processor until fine and mix with melted butter. Spread the mixture on a baking sheet and toast for about 5-7 minutes until lightly browned.
  2. In a bowl, whisk together lemon pudding mix and milk until thickened (about 2 minutes). Gently fold in one container of Cool Whip.
  3. Beat softened cream cheese with a hand mixer; gradually add powdered sugar until smooth. Fold in two containers of Cool Whip and lemon zest.
  4. In a trifle dish, layer one-third of graham cracker crumbs, followed by half of the cream cheese mixture, then half of the lemon pudding mixture. Repeat layers and finish with remaining Cool Whip on top.
  5. Garnish with lemon slices and mint leaves if desired, cover with plastic wrap, and chill for at least four hours before serving.
