Ingredients

  • 4 cups curly kale
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon fresh minced garlic
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup croutons (homemade or store-bought)
  • 1/4 cup freshly grated parmesan cheese

Instructions

  1. Wash the curly kale thoroughly and remove the leaves from the stems.
  2. Finely chop the kale and place it in a medium-large bowl.
  3. In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and black pepper.
  4. Drizzle half a teaspoon of dressing onto the chopped kale and massage gently to soften the leaves.

  6. Crush croutons into smaller pieces and add them on top.
