  • 4 1/4 cups all-purpose flour
  • 4 1/2 tsp instant dry yeast
  • 1 cup buttermilk
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 2 Tbsp fresh lemon zest
  • 2 cups powdered sugar
  • 1/4 cup fresh lemon juice

Instructions

  1. In a mixing bowl, combine flour, yeast, and salt.
  2. Cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, followed by buttermilk and lemon zest; mix until smooth.
  4. Gradually incorporate the dry ingredients until the dough forms.
  5. Knead the dough for about 5 to 7 minutes until soft and slightly tacky.
  6. Let the dough rise in a greased bowl for about 45 minutes until doubled in size.
  7. Roll out dough into a rectangle, spread with softened butter, and sprinkle with sugars and more lemon zest.
  8. Roll tightly into a log and cut into individual rolls using dental floss.
  9. Place in a greased pan for a second rise of about 30 minutes.
  10. Bake at 350°F for 25-28 minutes until golden brown.
  11. For the icing, combine powdered sugar and fresh lemon juice; drizzle over warm rolls.
