  • ¼ cup lime juice (about 2 limes)
  • Neon green food coloring (optional)
  • ¼ cup granulated sugar (for coating)
  • ½ cup powdered sugar (for coating)

Instructions

  1. Preheat your oven to 350°F.
  2. In one bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together butter and granulated sugar until light and fluffy.
  4. Mix in lime zest and eggs one at a time, followed by lime juice.
  5. Gradually add dry ingredients to the wet mixture until combined; chill dough for about 30 minutes if too sticky.
  6. Scoop dough into balls using a cookie scoop; roll first in granulated sugar then coat in powdered sugar.
  7. Place on prepared baking sheets with space between each cookie.
  8. Bake for 9-11 minutes or until puffed and edges are set but centers remain slightly shiny; cool before transferring to wire racks.
